
Trails End Bar B Q was another chicken and rib joint in Uptown during the 1970s. I never ate here. The Latin Eagles’ graffiti on the front of the restaurant didn’t help customers’ impressions. Nor did all the grunge on the door and the crumbling facade. Nevertheless, I must say this. The best ribs I’ve ever had in my life have been in Chicago rib joints like this one. Chicago has a distinctly different style of barbecue compared to Texas. In Chicago, the sauce is baked into the meat over an open grill. In Texas, the meat is smoked in an oven or covered grill, then the sauce is poured on after the meat has cooked. I prefer the Chicago style and miss it greatly.
